Chocolate Butternut Munchkins

Ingredients

Chocolate Cake:

  • 1 ½ cups all-purpose flour

  • 1 ¼ cups white sugar

  • ½ cup unsweetened cocoa powder

  • 1 ½ teaspoons baking powder

  • ½ teaspoon salt

  • ⅓ cup vegetable oil

  • 1 egg

  • 1 tablespoon vanilla extract

  • ¾ cup milk

  • ¾ cup boiling water with 2 teaspoons coffee powder dissolved in it

Chocolate Glaze:

  • 1 ½ cups powdered sugar

  • ½ cup cocoa powder

  • ½ cup milk

Butternut Topping:

  • 1 ½ cups fine desiccated coconut

  • 3 tablespoons powdered sugar

  • 3 tablespoons melted butter

  • 1 teaspoon orange food colouring

Preparation

  1. Preheat oven to 350°F (175°C). Grease a muffin tin or prepare a mini muffin tin with liners.

  2. Whisk together flour, sugar, cocoa powder, baking powder, and salt. In a separate bowl, mix the vegetable oil, egg, vanilla extract, and milk. Gradually add the dry ingredients to the wet, stirring until just combined. Stir in the boiling water with coffee until the batter is smooth.

  3. Fill the muffin cups about three-quarters full. Bake for 20-25 minutes or until a toothpick comes out clean. Let cool completely.

  4. Prepare the Chocolate Glaze: Sift together the powdered sugar and cocoa powder in a medium bowl. Gradually whisk in the milk until smooth.

  5. Make the Butternut Topping: Mix the desiccated coconut, powdered sugar, melted butter, and orange food colouring in a bowl until the coconut is evenly coloured.

  6. Assemble the Munchkins: Once the cake balls are cool, dip each one into the chocolate glaze, then immediately roll them in the butternut topping until well coated. Set on a wire rack to let the glaze set, about 1 hour.
