Peanut Butter Cookies
Total time: 20 minutes
Servings: 12 cookies
Ingredients
1 cup brown sugar (200 grams)
1 large egg (56 grams)
1 cup peanut butter (240 grams)
1 tsp baking soda (6 grams)
½ cup milk or dark chocolate chips (95 grams), plus extra for topping
Preparation
In a large bowl, thoroughly mix 1 cup of brown sugar with 1 large egg until well combined. This ensures a smooth base for your cookies.
Stir in 1 cup of peanut butter and 1 tsp of baking soda to the sugar-egg mixture until smooth. Then, gently fold in ½ cup of chocolate chips. Avoid over-mixing to keep the texture of the cookies soft.
Scoop out the cookie dough using a cookie scoop to ensure uniform size, and roll into balls. Place these on a baking sheet lined with parchment paper, spaced well apart to allow for spreading.
Preheat the oven to 350°F (175°C) and bake the cookies for 8-10 minutes, just until the edges start to turn golden. Watch closely to avoid overbaking.
Remove the cookies from the oven and immediately press a few additional chocolate chips on top of each cookie for a gooey and attractive finish.
Let the cookies cool on the pan for 5 minutes before transferring to a cooling rack to cool completely.
