Apple Pie Recipe

Prep Time: 60 minutes | Baking time: 50 minutes

Ingredients

PIE CRUST:

  • 3 ¾ cups all-purpose flour

  • 3 tbsp white sugar

  • 1 tsp salt

  • 1 ¼ cups unsalted butter, chilled and cubed (300g)

  • 1 cup cold water

FILLING:

  • 7 apples - peeled, cored, and sliced

  • 1/2 cup brown sugar

  • 1 tbsp cinnamon

TOPPING:

  • 1/2 cup butter

  • 3 tbsp all-purpose flour

  • 1/4 cup water

  • 1/2 cup brown sugar

EGG WASH:

  • 1 egg yolk

  • 1 tbsp water

Preparation

  1. Prepare the Pie Crust:

    In a large mixing bowl, combine the flour, sugar, and salt.

    Work the cold, cubed butter into the flour mixture using your fingers until it resembles coarse crumbs.

    Gradually add the cold water, stirring as you pour, until the dough begins to come together.

    Form the dough into a ball, then divide it into two portions—about three-quarters for the bottom crust and one-quarter for the lattice top.

    Wrap each portion in cling wrap and refrigerate for at least 30 minutes to firm up the butter, making the dough easier to roll.

  2. Make the Filling:

    In a medium saucepan, combine the sliced apples with sugar and cinnamon. Cook over medium heat until the apples are just tender, about 5-7 minutes. Set aside to cool.

  3. Prepare the Topping:

    In another saucepan, melt the butter over low heat. Stir in the flour to create a paste.

    Add water and brown sugar, and stir continuously as you bring the mixture to a boil. Once thickened, remove from heat.

  4. Assemble the Pie:

    On a lightly floured surface, roll out the larger portion of chilled dough to fit a 9-inch pie dish. Transfer the rolled-out dough to the pie dish, trimming any excess with scissors.

    Preheat your oven to 392°F (200°C).

    Spoon the cooled apple filling into the crust. Evenly spread the prepared topping over the apples.

    Roll out the remaining dough and cut into strips for the lattice. Weave the strips over the filling to form a lattice top. Trim and crimp the edges to seal.

    Whisk together the egg yolk and water to make the egg wash. Brush this mixture over the lattice top.

  5. Bake the Pie:

    Bake in the preheated oven for 15 minutes. Then reduce the temperature to 350°F (175°C) and continue baking for another 35-45 minutes, until the crust is golden brown and the filling is bubbling.

  6. Cool and Serve:

    Allow the pie to cool on a wire rack for at least 2 hours before serving to let the filling set properly.
