Healthy Banana Pancakes

Ingredients
2 medium bananas
1/2 cup milk
2 eggs
1 cup blended oats (or your choice of flour)
2 teaspoons baking powder
Toppings (optional):

maple syrup
Preparation
Prepare the Pancake Batter:
In a mixing bowl, thoroughly mash the bananas with a fork until smooth. Add the milk and eggs, whisking together until the mixture is well combined and smooth.
Gently fold in the blended oats and baking powder until just incorporated. Be careful not to over-mix to keep the batter light and fluffy.
Cook the Pancakes:
Heat a non-stick skillet over medium heat. Lightly oil the pan with a paper towel dipped in vegetable oil to ensure the pancakes do not stick.
Pour 1/3 cup of batter for each pancake into the skillet. Cook until bubbles form on the surface, about 2 minutes, then flip the pancake and cook for an additional 2 minutes on the other side, or until golden brown.
