Chicken Chow Mein Noodles

Ingredients

For the Chicken Marinade:

  • 2 chicken breasts or thighs, thinly sliced

  • 4 tablespoons soy sauce

  • 2 teaspoons sesame oil

  • 4 teaspoons cornstarch

For the Sauce:

  • 5 tablespoons soy sauce (adjust to taste)

  • 3 tablespoons oyster sauce

  • 3 tablespoons vinegar

  • 1 tablespoon sugar

  • 1 teaspoon black pepper

  • 1 teaspoon chicken seasoning (optional)

For the Chow Mein:

  • 400 grams (14 oz) chow mein noodles or egg noodles

  • 6 tablespoons vegetable oil

  • 4 cloves garlic, minced

  • 1 medium onion, sliced

  • 1 carrot, julienned

  • 2 cups cabbage, shredded

  • 2 green onions, chopped

Preparation

  1. In a bowl, mix chicken slices with soy sauce, sesame oil, and cornstarch. Let marinate for at least 15 minutes to enhance the flavour and tenderise the chicken.

  2. Cook the chow mein noodles according to package instructions, usually boiling for about 3-4 minutes. Drain well and set aside to prevent sticking.

  3. Prepare the sauce by combining soy sauce, oyster sauce, vinegar, sugar, black pepper, and chicken seasoning if using.

  4. In a large skillet or wok, heat 5 tablespoons of vegetable oil over medium-high heat. Stir-fry the marinated chicken until fully cooked and golden, about 3-5 minutes. Remove from the wok and set aside.

  5. Add the remaining tablespoon of oil to the wok. Sauté garlic and onions until translucent. Add carrots and cabbage, stir-frying for 2-3 minutes until just tender.

  6. Return the cooked chicken to the wok, add the cooked noodles and green onions. Pour in the prepared sauce and toss everything together over medium-high heat until well combined and the noodles are heated through.

  7. Serve the Chicken Chow Mein hot, garnished with extra green onions or a sprinkle of sesame seeds.
