Pork & Chives Dumplings

Ingredients

Dough:

  • 500 grams (4 cups) all-purpose flour

  • 1 cup warm water

Filling:

  • 500g ground pork

  • 3 cups Chinese chives, finely chopped

  • 6 cloves garlic, finely chopped

  • 2 tbsp soy sauce

  • 2 tbsp sesame oil

  • 2 tsp salt

  • 1 egg

Dipping Sauce:

  • ¼ cup soy sauce

  • ¼ cup rice wine vinegar

  • 1 teaspoon sesame oil

  • 1 teaspoon crushed red pepper flakes

Preparation

  1. Prepare the Dough: Place flour in a large mixing bowl. Gradually add warm water, mixing and kneading until a smooth dough forms. This should take about 10 minutes. Cover with a damp cloth and let it rest for 30 minutes.

  2. Roll and Cut the Dough: Divide the rested dough into 4 equal parts. Roll each part into a thin log and cut each log into 8 pieces, yielding 32 pieces total. Roll each piece on a floured surface into a thin, 4-inch diameter circle.

  3. Make the Filling: In a large bowl, combine ground pork, chopped chives, garlic, soy sauce, sesame oil, salt, and egg. Mix well until all ingredients are thoroughly incorporated.

  4. Assemble the Dumplings: Place about 1 tablespoon of filling in the center of each wrapper. Moisten the edge of half the wrapper with water, fold over the filling, and pleat edges to seal securely.

  5. Cook the Dumplings: Heat oil in a large skillet over medium-high heat. Add dumplings in batches without overcrowding. Once bottoms brown, add a small splash of water and cover with a lid to steam for about 5 minutes or until cooked through and water has evaporated.

  6. Prepare the Dipping Sauce: Mix soy sauce, rice vinegar, sesame oil, and red pepper flakes in a small bowl
