Chicken Fajita Pasta

Chicken Fajita Pasta

Ingredients
500g pasta (any type you prefer)
500g chicken breast, thinly sliced
1/2 tbsp baking soda (for tenderising chicken)
35g Fajita seasoning
4 cloves garlic, minced
1 onion, sliced
2 capsicums, sliced
1/2 tbsp salt
250g cream cheese
1 cup reserved pasta water
Preparation
Sprinkle the chicken slices with baking soda and let sit for 15 minutes to tenderise. Rinse thoroughly and pat dry.
Season the chicken with half of the fajita seasoning and let it marinate while you prepare the other ingredients.
Bring a large pot of salted water to a boil. Cook the pasta until al dente. Reserve 1 cup of the pasta water, then drain the pasta and set aside.
Heat a large skillet over medium heat. Add a tablespoon of oil and sauté the garlic, onion, and capsicums until the onions are translucent and the capsicums are just tender. Remove from the skillet and set aside.
In the same skillet, add the chicken and cook until browned and no longer pink inside.
Lower the heat and return the sautéed vegetables to the skillet. Add the remaining fajita seasoning, salt and pasta. Stir in the cream cheese until melted, adding reserved pasta water to create a smooth sauce.
Adjust the seasoning to taste and serve the pasta hot.
