Creamy Shrimp Pasta

This easy to make creamy shrimp pasta combines tender shrimp with a rich creamy sauce. Perfect for a quick yet elegant dinner, it pairs beautifully with any type of pasta you prefer. It is simple to make and you can cook this in only 30 minutes so it is perfect when you don’t have much time to prepare a meal.

Tip #1

Cooking Shrimp: Avoid overcooking the shrimp as they can become rubbery. They cook quickly and are done when they turn pink and opaque, usually within 1-2 minutes per side.

Tip #2

Sauce Consistency: If the cream sauce thickens too much after adding to the pasta, use the reserved pasta water to thin it to your liking. This helps create a silky texture that coats the pasta evenly.

Tip #3

Enhancing Flavour: Fresh lemon juice adds a bright note to the cream sauce. Adjust the amount to suit your taste.

Creamy Shrimp Pasta

Total Time: 30 minutes

Serves: 4

Ingredients

  • 250g pasta (linguine, spaghetti, or your choice)

  • 2 tablespoons of olive oil

  • 500g shrimp, peeled

  • 5 tbsp butter

  • 4 cloves of garlic, minced

  • 1 1/2 cup of heavy cream

  • 1 tablespoon of lemon juice

  • salt and ground black pepper, to taste

  • 2 tablespoons fresh parsley, chopped (for garnish)

Preparation

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain, reserving a cup of pasta water, and set aside.

  2. Heat olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and cook for about 1-2 minutes on each side, or until they are pink and opaque. Remove the shrimp from the skillet and set aside.

  3. In the same skillet, reduce the heat to medium and add the butter. Once the butter melts, add the minced garlic and cook until fragrant, about 1 minute. Pour in the heavy cream and lemon juice. Let it simmer for a few minutes to thicken slightly. Add salt and pepper to taste.

  4. Add the cooked pasta to the skillet with the sauce, tossing to coat well. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency. Return the shrimp to the skillet and gently toss to combine and heat through.

  5. Remove from heat. Drizzle with a bit more olive oil, and garnish with chopped parsley.
