Easy Fluffy Pancakes

Temperature Check: If you’re unsure about the skillet’s heat, test it by sprinkling a few drops of water on it. If they dance and evaporate, the skillet is ready for the batter.

Easy Fluffy Pancakes

Total time: 30 minutes

Servings: 8-10 pancakes

Ingredients

  • 2 cups all-purpose or plain flour

  • 4 tablespoons white sugar

  • 4 teaspoons baking powder

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 3/4 cups milk

  • 4 tablespoons unsalted butter, melted

  • 2 teaspoons vanilla extract

  • 1 large egg

Preparation

  1. In a large bowl, sift together the flour, sugar, baking powder, baking soda, and salt. Make a well in the center of the dry ingredients.

  2. Into the same bowl, add the milk, melted butter, vanilla extract, and egg.

  3. Whisk everything together until just combined. The batter should be slightly lumpy; avoid overmixing to ensure your pancakes stay fluffy.

  4. Preheat a nonstick pan over medium heat and lightly grease it with butter or cooking spray.

  5. Pour 1/3 cup of batter per pancake onto the hot pan. Cook until bubbles appear on the surface, then flip and cook until golden brown on the other side, approximately 2 minutes per side.

  6. Serve the pancakes hot with your preferred toppings, such as syrup, berries, or whipped cream.
