Pork Mince Stir Fry

Ingredients

  • 300g green beans

  • 1 onion, finely chopped

  • 3 cloves garlic, finely chopped

  • 2 tsp ginger, finely chopped

  • 250g pork mince

  • 2 tbsp vegetable oil

For the Sauce:

  • 1 tbsp soy sauce

  • 1 tbsp Chinese cooking wine

  • 1 tsp sugar

Preparation

  1. In a small bowl, combine the soy sauce, Chinese cooking wine, and sugar. Stir well until the sugar is dissolved. Set aside.

  2. Trim the tough ends off the green beans and chop them into 2-inch pieces. Heat 1 tablespoon of oil in a large non-stick wok or frying pan over high heat until smoking. Add the green beans and stir-fry for about 3 minutes, stirring every minute, until they are charred yet tender-crisp. Remove the beans from the pan and set them aside in a bowl.

  3. Reduce the heat to medium-high and add the remaining 1 tablespoon of oil to the pan. Add the chopped onion, garlic, and ginger, and stir-fry for about 1 minute until they are soft and golden. Increase the heat to high, add the pork mince and stir-fry for 2 minutes, breaking it apart as it cooks until no longer pink.

  4. Pour in the prepared sauce, stirring well to coat the pork. Cook for 1 minute, then reintroduce the green beans and stir everything together for another minute to heat through.

  5. Serve the stir fry hot, garnished with chopped spring onions if desired. This dish pairs excellently with steamed rice.
