Ingredients
For the Caramel:
1 tbsp sugar
1 tsp water
For the Custard:
1 egg
3/4 cup milk
1 tbsp sugar
1/4 tsp vanilla extract
Preparation
In a microwave-safe bowl or ramekin, combine 1 tbsp sugar and 1 tsp water. Microwave on high for 1 minute, then check. Continue microwaving in 10-second intervals until the sugar turns light brown and caramelised, but not exceeding 1 minute and 20 seconds in total.
In a mixing bowl, gently whisk together 1 egg, 3/4 cup milk, 1 tbsp sugar, and 1/4 tsp vanilla extract. Whisk gently to avoid incorporating too much air, which can cause bubbles.
Pour the custard mixture over the caramel in the microwave-safe bowl. Microwave on high for 1 minute, then check the consistency. If the outside is set but the center is slightly jiggly, it's done. If still runny, continue microwaving at 10-second intervals, not exceeding 1 minute and 20 seconds total.
Allow the flan to cool to room temperature. Cover with foil and refrigerate for at least 4 hours to set completely before serving.
