Beef Stir Fry Noodles

This beef stir-fry noodles is a quick and flavourful meal, featuring tender slices of beef and flat rice noodles tossed with fresh broccoli and eggs. Beef Stir Fry Noodles

Ingredients

  • 225g flat rice noodles (fresh or rehydrated if dried)

  • 500g beef, thinly sliced

  • 1 tsp baking soda

  • 2 tablespoons vegetable oil

  • 3 cloves garlic, minced

  • 2 cups broccoli florets

  • 2 eggs

  • 5 tablespoons soy sauce

  • 2 tablespoon oyster sauce

  • 2 tsp white vinegar

  • 2 tablespoon sugar

  • Pepper to taste

  • Green onions, chopped

Preparation

  1. Soak rice noodles in warm water for 20 minutes. Drain and set aside.

  2. Marinate beef in baking soda for 15 minutes to tenderise the meat.

  3. Heat vegetable oil in a large pan or wok over medium-high heat. Add sliced beef and cook until browned. Remove from the pan and set aside.

  4. In the same pan, add a bit more oil if needed. Add minced garlic and sauté until fragrant. Add broccoli florets and cook until slightly tender.

  5. Push the vegetables to the side of the pan, pour beaten eggs into the empty space. Scramble the eggs until just cooked.

  6. Add the cooked beef back to the pan with the vegetables and eggs. Mix everything together.

  7. In a small bowl, whisk together soy sauce, oyster sauce, vinegar, sugar and pepper.

  8. Pour the sauce over the beef and vegetable. Add the cooked rice noodles. Toss everything until well combined and heated through.

  9. Transfer to a serving dish, garnish with chopped green onions.
