Ingredients

  • 1 cup shaved ice

  • 3 tablespoons sweetened evaporated milk

  • 1 tablespoon sweetened banana

  • 1 tablespoon sweetened jackfruit

  • 1 tablespoon cooked sweetened red mung beans

  • 1 tablespoon coconut strings

  • 1 tablespoon ube jam

  • 1 tablespoon red kaong (coconut gel)

  • 1 tablespoon pandan jelly, cut into cubes

  • 1 tablespoon sweetened sago pearls

  • 1 scoop ube ice cream

  • 1 tablespoon leche flan

  • Pinch of toasted rice (pinipig) or rice crisps

  • Wafer sticks (optional)

Preparation

  1. Prepare Sweetened Ingredients: For sweetened banana and jackfruit, simmer slices in a mixture of sugar and water until tender and syrupy. For the mung beans, boil until soft, drain, then cook with a little sugar until they form a thick, sweet paste.

  2. Layer the Ingredients: In a tall glass, layer each tablespoon of the prepared ingredients. Start with the heavier items like beans and jellies at the bottom, and build up to the lighter ones.

  3. Top and Serve: Top the mixture with a generous amount of shaved ice. Pour over the sweetened evaporated milk, ensuring it seeps down through the ice. Add a scoop of ube ice cream and a piece of leche flan on top. Garnish with toasted rice (pinipig) or rice crisps for a crunchy texture, and add a wafer stick if desired.
