Lazy Chicken Pho

Ingredients
5-7 cups water
3 Chicken drumsticks
1 large onion, quartered
Ginger, a 2-inch piece, sliced
2 tbsp sugar
2 tbsp fish sauce (adjust to taste)
1 tbsp salt
Spices: 1 star anise, 1 cinnamon stick, 2 cardamom pods, 1 tsp fennel seeds, 1 tsp coriander seeds
Toppings:
Coriander, chopped
Spring onions, chopped
Hoisin sauce
Chilli, sliced
Preparation
In a large pot, combine water, chicken drumsticks, onion, ginger, sugar, fish sauce, salt, and all the spices. Bring to a boil, then reduce to a simmer for about 40 minutes until the chicken is tender and fully cooked.
Take the chicken out of the broth, let it cool slightly, and then shred it into bite-sized pieces.
Strain the broth to remove the spices and solids, returning the clear broth to the pot. Adjust seasoning with more fish sauce or salt if needed.
Place some shredded chicken in bowls, pour the hot broth over the chicken, and garnish with coriander, spring onions, sliced chilli, and a drizzle of hoisin sauce.
