Pork Adobo
Preparation Time: 1 hour and 15 minutes

Ingredients
1 onion
5 cloves garlic
500g pork belly or pork shoulder, cut into 2-inch cubes
1/4 cup soy sauce
1/4 cup white vinegar
1 cup water
2 bay leaves
1/2 teaspoon whole black peppercorns
2 green chilies
2 tablespoons sugar (adjust to taste)
Preparation
Heat the cooking oil in a large pot or skillet over medium-high heat. Add the minced garlic and sliced onions to the pot. Continue to sauté until the onions are translucent and the garlic is fragrant.
Add the pork cubes and sauté them until they are nicely browned on all sides. This should take about 5-7 minutes.
Pour in the soy sauce, vinegar, and water. Add the bay leaves, whole peppercorns and green chilies.
Bring the mixture to a boil, then lower the heat to a simmer. Cover the pot and let it cook for about 45 minutes or until the pork is tender.
Taste the sauce and adjust the seasoning if necessary. If you prefer a slightly sweet adobo, you can add some sugar at this stage. Stir well to combine.
If you prefer a thicker sauce, you can continue to simmer the adobo uncovered for an additional 10-15 minutes, or until the sauce reaches your desired consistency.
Serve the Pork Adobo hot, ideally with steamed rice.
