Steak and Mashed Kumara

Ingredients

  • 600g lean steak cut (such as sirloin or filet mignon)

  • 2 tablespoons olive oil

  • Salt and pepper, to taste

  • 600 grams kumara (sweet potato), peeled and cubed

  • 1/4 cup low-fat milk

  • 1 tablespoon light butter

Preparation

  1. Rub each steak with a half tablespoon of olive oil and season generously with salt and pepper. Place steaks on a skillet and cook for about 4-5 minutes per side for medium-rare, or longer depending on your preferred doneness.

  2. While the steak is cooking, place the cubed kumara in a pot of boiling water. Cook until tender, about 15-20 minutes.

  3. Drain the kumara and return to the pot. Add low-fat milk and light butter, then mash until smooth. Season with salt and pepper to taste.

  4. Slice the steaks against the grain. Serve each steak with a generous scoop of mashed kumara. Garnish with fresh herbs.
