Air Fryer Peanut Chicken

Ingredients
For the Marinade:
1 kg chicken, cut into pieces
½ cup coconut milk
¼ cup soy sauce
2 cloves garlic, minced
1 tbsp ginger, minced
2 tbsp brown sugar
For the Thai Peanut Sauce:
1 cup coconut milk
½ cup peanut butter
2 tbsp fish sauce
2 tbsp soy sauce
2 tbsp Thai red curry paste
2 tbsp brown sugar
Juice of 1 lime or lemon
Preparation
In a large bowl, combine the coconut milk, soy sauce, minced garlic, ginger, and brown sugar. Add the chicken pieces and toss well to coat. Let the chicken marinate in the refrigerator for at least 30 minutes, or up to 4 hours for deeper flavour.
Preheat the air fryer to 180°C (350°F). Place the marinated chicken in the air fryer basket in a single layer. Cook for about 20-25 minutes, turning halfway through, until the chicken is golden and cooked through.
While the chicken is cooking, prepare the peanut sauce. In a saucepan over medium heat, combine coconut milk, peanut butter, fish sauce, soy sauce, Thai red curry paste, and brown sugar. Cook, stirring frequently, until the sauce is smooth and heated through. Stir in the lime or lemon juice just before serving.
Serve the air fried chicken with the warm peanut sauce drizzled on top or on the side for dipping.
